Udon's mom's chicken meatballs
Another one of my mom's recipes—chicken meatballs. Unlike a lot of other chicken meatballs I've had in my life, these come out very juicy and delicious due to the combination of grilling and steaming to cook them through. Goes well with pasta and tomato sauce, or in a sandwich.
Ingredients
- around 450g (1 lb) ground chicken
- 1 egg
- 1 small onion (or half a large onion)
- 1-2 cloves garlic or equivalent garlic powder
- at least 3-4 Tbsp breadcrumbs
- 3-4 Tbsp oats (optional)
- parsley
- salt
- pepper
- olive oil
How to make
Prep- Mince the onion and garlic finely. Wash and chop the parsley.
- In a large bowl, mix the ground chicken, onion, garlic, and parsley. Add salt and pepper to taste (and any other spices you want).
- Add 3-4 Tbsp of breadcrumbs and mix with a large spoon. Add oats if you want.
- This mixture should be solid enough that you can roll it into little balls, but not so thick that it’s hard to mix. If it’s not thick enough, add more breadcrumbs.
- Add a string of olive oil.
Cooking
- If you want to try the meatballs for spice/salt, put the pan on medium heat and add a drop of olive oil. Put a tiny patty of mixture and grill it till it’s browned and cooked through, and taste it. Adjust the salt/spices to taste.
- Roll the mixture into meatballs with your hands or spoons.
- Oil the pan with olive oil and put it on medium heat. Place the meatballs on it and grill until they’re browned, turning them over to cook evenly with tongues or another utensil.
- Add a bit of water to the pan and steam them with the lid on for 5-10 minutes, to make sure they’re cooked through. Add a little more water if it evaporates completely partway through.
- They’re ready! Enjoy!
